How To Prepare Fried Rice – Nigerian Fried Rice
- The rice that is well boiled ensures that the rice grains will not stick together while the rice is cooked. Rinse the boiled rice with cold water and put it in a colander until the water runs out.
- Pour the chicken stock into a colander to remove any remaining onions, thyme, etc. Which is used to cook chicken. Pour the stock into a saucepan and let it boil. After the water boils, add the boiled rice. Also add 1 tablespoon of regular yellow curry powder, then add salt to taste. Regular yellow curry powder is intended for coloring purposes only, so it shouldn’t contain chilies.
- The water level should be just below the surface of the rice; At most, it should be almost the same as rice. This is to ensure that all the water has dried by the time the rice is cooked and that the rice does not soften too much. This is the amount of water that will cook the rice, and the grains won’t stick together. Turn the contents over, cover the pot and let it boil over medium heat. This way, the rice doesn’t burn until the water dries up.
- After the water dries up, the rice should be cooked to perfection. Fried rice is ideal if the grains are separated from each other so that it is resistant to bites but not hard.
- Now, transfer the rice to a casserole dish or other pan to help it cool quickly. Again, this is necessary to prevent the pills from sticking together. If the rice is left in the original hot pot, it will continue to cook and stick to the end.
At this point, it is advisable to divide the vegetables into 4, 5, or even 6 equal portions. The rice will fry gradually, so the amount depends on how much rice you can comfortably fry in the pan or pan. Also, divide the diced rice and liver into equal parts. - Then you need to pour some quantity of the vegetable oil into the pan. The amount of this oil should be such that it can be absorbed by one part of the rice and one part of each vegetable. When the oil is hot, add 1 part diced onion and stir for 10 seconds, followed by 1 part sliced beef liver, 1 part sliced vegetables, then 1 part rice.
- Add more salt if necessary. More curry powder can also be added at this point if you need to improve the color. Stir until all ingredients are well combined, then transfer to a dry bowl. Repeat for the remaining ingredients.
The fried rice is ready. Served with fried chicken. You can add coleslaw, moi moi, or Nigerian salad.
